Stringy white poop is often a parasitic issue, as others have said. I'd quarantine the affected Molly if possible. Also, what's your water change routine? Consistency there can help prevent stress, which weakens their immune system.

Twice a week is solid, but with Discus, bigger changes are better. I do 50% every 3 days in my 100-gallon. They're super sensitive to buildup, even if params look fine. What's your temp at? They like it hot, around 84-86°F. Also, how's your feeding routine? Overfeeding can mess with water quality ...

Have you tested for stray voltage? Sometimes a faulty pump or heater can leak current into the water, stressing corals. I've seen it cause bleaching before. A simple multimeter check could rule that out. Also, how's your flow pattern? Dead spots can lead to issues.
