I'd say it's no more complicated than setting up a new tank, if you plan it out properly. Losing 160 litres of water isn't a big deal, it's basically like a 40% water change. As long as your fish are happy during the changeover, you're golden.

If I were you, here's what I'd do - move that thermometer to a side, out of the way. I'm not a fan of seeing equipment in the tank, but if it's got to be there, let's hide it. Considering your clownfish were already attached to the deceased pygmy, it's likely due to their natural preference for pairing up. This probably led to the bond they formed with the cherub angel fish, as it was a social companion for them.

Replacing the pygmy with a similar fish isn't a guaranteed ...

I think having another clownfish in the tank would be a good idea, so you've got a pair. The loss of a similar sized tankmate might've had an effect, but it's unlikely to be depression due to them being different species. They resemble RPE from Indo, I'd say they're a nice zoa, that green mouth does give it a bit of a PE vibe though.
