That could work, but they're generally found in the wild under an overhang, away from direct light. Agree with that, should be fine. Main issue you'll have is getting the snowflake to take food.

I've got a tank with a "freshwater moray eel" - I'm aware it's actually a brackish eel. Currently, my salinity is set at 1.012, but I plan to increase it to 1.018 over time.

My tap water seems to be alright, I've tested it and it comes out with zero ammonia, nitrites, and nitrates.

I can understand your concern about collecting from the beach, but I've heard it's generally okay. If you're still worried about contamination, you could give the rock a good clean - maybe even boil it to be extra safe.
