I've had a few seed pods from my Anubias nana form completely underwater.

Do anubias seed pods actually contain viable seeds, or are they empty?

Some plants are capable of self-fertilization, essentially pollinating themselves, but I'm not certain if Anubias possess this trait.

Anubias can produce flowers if they're grown emersed, out of water.
I'm not sure if Anubias are self-fertile, but to me, the whole point of flowers is to get pollen from another plant to strengthen the species. It seems counterintuitive for a plant to self-pollinate, doesn't it? I mean, animals don't self-pollinate because it leads to genetic weakness, so I'd think it'd be the same for plants.

I'm not even sure if they're seeds, they just kinda resemble them

For my 400-litre tank, I use four caps of Seachem Flourish Potassium. The bottle cap is 5ml, so it's a straightforward dosage of 5ml per 100 litres of tank water. What's your tank size in litres?

Just curious, since I don't use ferts, how do you add it to your tank? Do you just pour it in, and what if a fish swims into it before it's fully dissolved?

When I add fertiliser, I put it into the inflowing water from the filter, that way it gets diluted before the fish can swim into it.

My tank's 40 litres.

Be careful with the dosage, 2ml is the amount you'll need for a 40l tank.
