I've had instances where I've moved a fish to the main tank after a month in quarantine, only to have ich show up later. I've found that those fish I've quarantined for less than two months have all met the same unfortunate fate - they've died after being moved.

I still think quarantine is a good call. You can keep an eye on the fish, make sure it's eating well, and if something does pop up, it's way easier to treat. No need to throw meds at it if it's not necessary, just quarantine and observe.
You're right, it's not just about ich - there are literally thousands of diseases that can hit your fish. And even if you can't see any ich, I'm convinced there's always a few parasites lingering on the fish.

I'm just curious, I cycled my tank for 6 months before adding my first fish, then a month later I added some seveflake tangs and an ich outbreak happened - I didn't have a QT tank, but luckily none of my fish died. It's been 7 years now and the ich hasn't come back, is that pretty normal? My first fish is still alive and happy in his anemone.

Consider yourself one of the fortunate ones
