I'd second the Mushrooms. They're forgiving and come in tons of colors. Just make sure your water params are stable.

Sounds like you're on the right track. Maybe bump feeding to 3x a week if you go with Gorgonians.

One more thing, if you're into weird vibes, check out Dendros. They're not photosynthetic at all but look insane under blues. Just gotta feed 'em daily.
