I've had good luck with White Cloud Mountain Minnows. They're hardy, peaceful, and don't bother plants. They're also great for cooler water tanks if you're not running a heater.

Exactly. Smaller fish are generally safer. Also, avoid any fish that are known to dig, as they can uproot plants.

Another thing to consider is the fish's diet. Herbivores are more likely to nibble on plants, so stick to omnivores or carnivores that won't see your plants as food.

I've heard that some people have issues with Mollies eating plants, but I've never had that problem. Maybe it depends on the individual fish or the type of plants.

If you're really worried about it, you could always start with a few fish and see how they behave before adding more. That way you can catch any issues early.
