I've got some hedge bindweed vine that's all dried up after a few months, and I'm wondering if I can use it in my tank. There's not much info out there, so I thought I'd ask.

Poisonous to humans, I wouldn't, it's not worth the risk.
Check out this guide from Colorado State University's College of Veterinary Medicine and Biomedical Sciences - it's a comprehensive database of poisonous plants, including trees, shrubs, and perennials that can harm animals. You can search by common or botanical name.
