Just got my hands on 10 juvenile N. Brichardis, they're currently in my 30g breeder with pure white aragonite sand substrate. Slate kits are on the way too. I'm pretty new to these guys, so any advice would be awesome. They're only about 1.5-2" right now, but once they grow a bit, I'm planning to pick out 2-3 pairs to keep. Will a 30g be big enough for 3 adult pairs? If not, I might have to rework my 55g into smaller tanks and turn it into a cichlid setup.

You're looking at a tight squeeze, dimensions-wise. It's anyone's guess how it'll play out - could end up with one pair, two, or even a harem. I'd just thin them out as you go, removing any that are getting picked on, and see what you're left with.
