Play sand can work, but you gotta be careful with the silica content. Some brands have additives or coatings that mess with water params. What's the brand? I've used Quikrete before with no issues, but it took forever to rinse.
It's the generic stuff from Home Depot. No brand name, just labeled ...

Is this play sand aquarium-safe?
I just bought some play sand from the hardware store for my 20-gallon tank. It's the fine, light-colored kind. Anyone know if it's safe for my Corydoras and Neon Tetras? I rinsed it a bunch, but wanna double-check before I dump it in.

Keep looking for any leftover food and remove it, that's still a source of ammonia. Also, give your filters a good cleaning, the water's still passing through them and it's possible that's where the issue is.

My tank's pretty low maintenance, only additives I use are food, sea salt, Calcium for my corals, and Bicarb to keep the alk stable.

Geez, I think your tank's got some issues, dude. I had an ammonia spike in my 12-gallon tank, and it only reached 0.25 ppm - nothing died.
