Your tank sounds like it's coming along nicely. How's the Rotala doing since you started cutting back on feeding?

If the betta starts going after the shrimp, try adding more plants. The more hiding spots, the better. Java Moss is great for that.

Sounds like you've got a good thing going. How's the Anubias attached? Superglue or thread?
