I think I've found the culprit - overeating when I feed the other fish. She can get pretty feisty about food.

I'd put her in a quarantine tank and treat with API Furan-2 if you can get your hands on it. Epsom salt baths can help too - they'll pull out excess fluid. Try a teaspoon of pure, fragrance-free epsom salt per gallon of dechlorinated water at the same temp as her tank. Leave her in for 5 minutes, then return her to the QT tank. You can do this up to 3 times a day. Fast her for a couple of days, then try the blanched, peeled pea. Keep us updated, I'm curious to see how she does.

That's fluxx I keep mine separate, so I don't have that issue. My female betta loves to jump for her pellets and my male koi isn't greedy - he'll move away. What food do you feed your female betta?

I've seen dropsy in various forms, and it's not always about going on their side. The most telling sign is pineconing, that's when you know for sure.
