I'm a bit confused by your question - brine shrimp are safe for bettas, I've been feeding them to mine without issue. To minimize the risk of introducing salt into the tank, I rinse the brine shrimp in a cup of tank water before adding them in. Could you clarify what you're getting at with the genetics part?

The shrimp's genetic material gets broken down during digestion. No genetic changes occur in the fish as a result.

Brine shrimp originally came from saltwater, that's what's got me wondering.

Rinsing those brine shrimp first to get rid of the excess salt makes a big difference. The small amount of salt left inside the shrimp itself won't cause any issues for your betta.
